Cake Fairy to the Rescue

I blame the oven. Margaret Fulton’s chocolate cake sounded good when it came to my turn to bake for the City of Sydney Media and Comms Unit Friday morning tea. But this was only my second cake-baking attempt in 62 years and it didn’t quite go to plan. If Jan hadn’t been out at her book club that evening she might have alerted me to the tell-tale signs – such as the smell of burning. But I wanted to make sure the cake was baked all through. It was, but it was also burnt black on the outside. Damn! I cut off the burnt bits. Now the formerly round cake was hexagonal – but it tasted good so I took it into work. Luckily one of my colleagues (Amy) is a Cake Fairy. She advised me to buy some ricotta and smooth it around the outside of the cake to cover up the chopped-off bits. Then she sprinkled fairy dust over the top! (Well, icing sugar). It was a triumph. The Cake Fairy saved my life.
